Cooking in Colorado

I love to cook and one of the things I am enjoying these days is cooking in other people’s kitchens. Recently I cooked a chicken dinner in Arizona and below is a video of me cooking Avocado Toast and Basted Eggs in Colorado. I hope you enjoy this video.

Ingredients;

2 eggs (chicken or duck)

1 ripe avocado

2 pieces of toast

roasted walnut oil or olive oil

fresh lemon

Directions:

Cut the avocado in half. Remove the seed. Scoop out the avocado and place it in a bowl. Squeeze some fresh lemon juice (1 tsp) into the bowl and add 1 tbl of roasted walnut oil or olive oil. Mash it up and mix it into a creamy mixture. Spread onto your toast.

Put one pat of butter into the frying pan and melt. Add 2 eggs and cook for 30 seconds (if chicken eggs, a little longer if duck eggs) then add 1 tbl of water and cover the eggs and set the timer for 1 minute 45 seconds. If you don’t care for runny eggs cook a little longer to your liking. (Duck eggs take longer to cook than chicken eggs.)

When the eggs are done put them on top of your avocado toast and enjoy!
