Pad Thai Chicken (gluten free)

I went to Thailand for two weeks this past January. I love Thailand. The country is absolutely beautiful and the people are gracious. The food was amazing to say the least. It felt like we ate all day long every day, but boy did I sure enjoy it!

One of the fun things I got to do while there was cook Pad Thai Chicken in my friend, Tammy’s kitchen. We went to the market to pick up our supplies and then off to the grocery store where American food has been imported. I was thrilled that we were able to purchase gluten free items to cook with.

We also bought sticky rice with coconut milk and some fresh ripe mangoes for dessert. Oh my was it ever yummy!

You can watch my video for step by step instructions on how to make this delicious gluten free dish. The recipe will be below the actual video on Youtube.

Protein Packed Veggie Burgers (Gluten Free)

If you like black beans you will love this veggie burger. A friend challenged me to make a veggie burger and so I did. Not only did I like it, I really liked it. In fact, the first time I made them I cooked one and ate it and immediately cooked a second one to eat right away.

I’ve bought veggie burgers in the store and thought they were pretty good. But any time you can make something fresh, it’s going to be so much better. I played around with some ideas for making my patties and was quite pleased with the outcome.

Healthy DIY Klondike Bars

I think any time of year is a great time for Klondike Bars. If you have dairy and gluten allergies then you will love this recipe. Even if you don’t have issues with gluten or dairy and just want a healthier alternative, this is the recipe for you. It’s super easy and quick to make (not counting the freezer time). It’s tastes oh so yummy too!

My husband doesn’t care for the taste of coconut oil so I used refined coconut oil for this recipe. Refined coconut oil has a neutral scent and flavor. If you love the taste of coconut then go ahead and use regular organic coconut oil. I enjoy the Klondike bars both ways.

Watch the video for step by step instructions for making these tasty frozen treats. The recipe will be below the actual video on YouTube under “show more”.

Super Easy & Delicious PAYDAY Candy Bars

My husband and I love PAYDAY candy bars. A few weeks ago he encouraged me to make homemade bars. So I took the challenge. Boy was I ever surprised at how yummy these things are. They are so easy to make and I personally thought they tasted even better than the store-bought PAYDAY candy bars.

These candy bars are great for snacking and great little treats to give away for Christmas. You could serve them at your holiday parties as well.

Watch the video below to see step by step instructions for making these awesome candy bars. The recipe is under the video on YouTube under “show more.”

Super easy and tastes yummy!

Are you a PAYDAY candy bar kind of person? What is your favorite candy?

Gluten and Dairy Free Almond Crackers

Who says you can’t eat delicious food if you can’t have gluten or dairy? A few years ago that might have been the case, but not now. There are so many yummy recipes available on Pinterest and in cookbooks. One of my friends who has Celiac Disease and eats dairy free is always working on creating delicious food that she can enjoy. Fortunately for me, she is willing to share her food and recipes.

I have a low tolerance for gluten. My body can handle some, but if I have too much, ouch! My body will hurt all over, especially my joints. So I am always interested in learning how to make delicious recipes that won’t cause inflammation.

I would love for you to meet my friend Ruth. She’s the one I was telling you about that has Celiac Disease. She’s in the video below showing how to make Gluten and Dairy Free Almond Crackers. After you watch the video, the recipe will be below the actual video on YouTube.

It seems like gluten and dairy are becoming more and more of a problem for many people. Is it a fad? I really don’t think so. I think with all the GMOs and the pesticides that are used in growing food it’s affecting our bodies like never before. Just my thoughts. What do you think?

Easy to Make Goat Cheese

I am blessed with friends from all over the world. My friends Leyland and Melva are from Guyana, South America. They own a little homestead here in Florida with goats and chickens.

Melva gave me some of her goat cheese one day and it was love at first “bite.” I asked if she could teach me how to make it and she was more than happy to. I also asked if she would like to make a video of us making the goat cheese. Obviously, she agreed to that as well.

I was super excited when Melva’s husband, Leyland, agreed to teach me how to milk a goat. Since I am basically a city girl this was an exciting adventure for me.

I hope you enjoy the video as much as I enjoyed making it. Please feel free to leave me comments. I’d love to connect with you. Do you have any ideas of things I could make videos of?

Goat Cheese Ice Cream

I love making homemade ice cream in the Vitamix. It’s so creamy and delicious. Recently, I made my sweet dark cherry ice cream and added goat cheese. Oh my goodness, it was super yummy! It reminded me of sorbet. It was sweet and tart.

I am blessed to have a friend that has goats and she has blessed me with goat’s milk and even homemade goat cheese. One of these days I hope to make a YouTube video making goat cheese. I will definitely write about it when I do.

Amazing Triple Chocolate Brownie Bites

If you are a chocolate lover these brownie bites are definitely for you. The best part about them is they are super easy to make. Most of my recipes are from scratch but this is one the few that isn’t. I actually buy the Hershey’s Triple Chocolate brownie mix at Sam’s Club. I use this mix to make these adorable little brownies. They are so cute and taste amazing!

Watch the video below to see how I make these brownie bites.

The Art of Hospitality

Recently I flew to Arizona for a couple of weeks to have some much needed girlfriend time. I am blessed to have a few close friends that I can just be me with. Leslie, also known as the Bohemian Sprout, is one of those friends.

Whenever I visit Leslie she always makes me feel like her home is my home. She has the gift of hospitality and I have the privilege of enjoying it!

One of the things that makes being a guest in Leslie’s home enjoyable is she’s always prepared. The guest area has been freshly cleaned and there is no dust anywhere. To someone like me with a lot of allergies, that is wonderful.

My second morning there I got up to an amazing breakfast with fresh hot coffee and orange juice. I felt so spoiled. That spoke volumes to me because Leslie doesn’t like to cook at all. In fact, when I am there, I do most of the cooking. That’s one of the small ways I can be a blessing to my friend and her family. If you have followed me for very long you probably know how much I enjoy cooking.

Avocado toast on gluten free bread and bacon

Leslie keeps a clean bath robe hanging behind the door in the guest room. In her bathroom she has plenty of toiletry items, a blow dryer, and just about anything you could possibly want or need. She doesn’t want me to have to pack a lot of extra items when I fly out to see her and this makes traveling so much easier.

One size fits most bath robe.
The medicine cabinet.
Bath bombs
My homemade hair conditioner.

Leslie had even made my homemade hair conditioner and had it waiting in the guest shower. Talk about going above and beyond to make you feel welcome! Wow, she knows just how to do it!

Sometimes I think the art of hospitality has been lost to some of the younger generation. Making people feel welcomed and loved is so important. You don’t have to go to the extent that my friend Leslie does. Hospitality can be simple but thoughtful.

I remember as a child when my grandparents or other guests would come to see us, we always gave them the best room, the best towels, etc. After becoming an adult, I’ve tried to do the same thing for our guests.

What do you do to help guests feel comfortable in your home? Please leave me comments down below. I would love to connect with you.

I’m thinking about writing a blog about being a good guest in someone’s home. What do you think?
