Nothing like a fun day shopping. I confess, I am addicted to bargain shopping. My latest shopping trip was this past weekend during the Back to School shopping days. Cooking in Colorado
I love to cook and one of the things I am enjoying these days is cooking in other people’s kitchens. Recently I cooked a chicken dinner in Arizona and below is a video of me cooking Avocado Toast and Basted Eggs in Colorado. I hope you enjoy this video.
Ingredients;
2 eggs (chicken or duck)
1 ripe avocado
2 pieces of toast
roasted walnut oil or olive oil
fresh lemon
Directions:
Cut the avocado in half. Remove the seed. Scoop out the avocado and place it in a bowl. Squeeze some fresh lemon juice (1 tsp) into the bowl and add 1 tbl of roasted walnut oil or olive oil. Mash it up and mix it into a creamy mixture. Spread onto your toast.
Put one pat of butter into the frying pan and melt. Add 2 eggs and cook for 30 seconds (if chicken eggs, a little longer if duck eggs) then add 1 tbl of water and cover the eggs and set the timer for 1 minute 45 seconds. If you don’t care for runny eggs cook a little longer to your liking. (Duck eggs take longer to cook than chicken eggs.)
When the eggs are done put them on top of your avocado toast and enjoy!

Thrifting, A Great Way to Save Money
I love a great bargain. One of the ways I find them is shopping in thrift stores. You do need to know your prices because even thrift stores can over charge on some items. Below is a video about shopping at Goodwill on half price day in Phoenix, AZ where they have half price day every other Saturday.
Many Goodwills have a 50% off sale on items tagged with the color of the week. If you don’t see a sign advertising the color, ask a sales clerk. They will inform you of the color of the week or what specials they may have. What are some of the places you find great deals? I hope you enjoy this video.

How to Cook an Easy Chicken Dinner

I’ve enjoyed my travels and cooking in different kitchens. This week I cooked in the Bohemian Sprouts kitchen in Arizona. The recipes are down below. For further instructions watch the video. You will want to take a peek at this brand new beautiful gluten free kitchen!
Recipes:
Roasted Chicken
After rinsing the chicken, sprinkle salt, black pepper, and onion powder in the cavity and on the outside of the chicken. Place 3 or 4 tabs of butter on the inside of the cavity and several tabs on top of the chicken. Place 1 cut up stalk of celery into the cavity to add extra flavor to the chicken. Place in preheated oven at 325 degrees Fahrenheit for approximately 1 hour and 15 minutes (depending on the size of your chicken). The chicken should be at 165 degrees Fahrenheit when it is done. Cover with tented tin foil for 20 minutes before serving.
Baked Sweet Potatoes
Thoroughly clean the outside of the potatoes and pierce with a knife 3 or 4 times. Drizzle olive oil on the potatoes and then wrap in tin foil. Place in a preheated oven of 425 degrees Fahrenheit for one hour.
Broccoli
Put chopped broccoli in a pan with about 1/2 cup of water on top of the stove. Place 1 to 2 tabs of butter on top of broccoli and then sprinkle with seasoning salt to taste. I use DIY Herbamare seasoning. The broccoli will be done in approximately 10 minutes.
Place 1 cup of gluten free peanut butter in a bowl. Add a cup of sugar, 1 large (beaten) egg, and 1 teaspoon of pure vanilla extract. Mix and make into tablespoon size balls and place on a cookie sheet covered with parchment paper. Use the tine of a fork to press the dough down. Now lightly sprinkle with kosher salt.(This will bring out the natural sweet flavor of the cookie). Place in a preheated oven at 350 degrees Fahrenheit for approximately 10 minutes. Place cookies on a cooling rack.

The Value of a Hug
It’s been proven that babies need to be touched in order to be healthy. Even if they are well fed and kept clean, they might not survive if they don’t have loving hands to embrace them. We all need to feel that touch that says, “I love you,” or “I accept you,”or “You are important to me.”
A little over a year ago I had the privilege of going to a particular foreign country. I felt so overwhelmed with the great need in this place. I asked God what I could do, being only one person. I felt like God told me to give value to every child and woman by giving them a warm and loving smile. It was amazing to see most of these precious people respond back with a beautiful smile. I felt as though I was able to show them I valued them as a human being. In this particular country there are a lot of poor people that are considered “untouchable”.
I’ll forever have etched in my memory the night a young girl came up to me and said in her broken English, “Ma’am, could you give me a hug?” I gave her a hug and she squeezed me tight and kept saying, “Thank you ma’am, thank you ma’am.” I hugged her a second time and she said, “No ma’am, you don’t have to hug me a second time.” I thought to myself, oh yes I do!
Until this trip I couldn’t begin to comprehend how a smile or a hug can mean the world to someone. I am a person that smiles a lot and I’m also a hugger. Until I met this little girl, I’d never realized the value of a hug.
A few months ago I was in a different country. I was smiling at people as we drove past them in the streets and a man stuck out his tongue at me. Wow, it hurt my heart. I wasn’t expecting this kind of response. He had a deep look of pain and possibly hatred in his eyes. As the old saying goes, “Hurting people hurt people.” It makes you wonder what kind of life he had.
I am determined to do my best to show value to people wherever I go. I will freely give smiles, words of affirmation, and hugs wherever and whenever appropriate. I hope you will do the same.
Sugar, One of My Biggest Enemies

I have without a doubt discovered one of my biggest enemies. Yep, it’s sugar. I’d heard for years how bad sugar was for my body, how it feeds cancer cells, etc. But like many others, I thought I don’t eat “that much” sugar so it can’t really hurt me. Unfortunately sugar is in just about all processed foods. Until I became a label reader, I had no idea how much sugar is in different products.
It’s such a shame that I had to wait until I became desperate to change my way of thinking about sugar. A few years ago my doctor informed me that I have Fibromyalgia. That was my wake-up call. I began to read all I could about this subject and that is when I started to realize how detrimental sugar really is to my body. I’m not talking about natural sugar from fruit. I’m talking about granulated sugar and things like corn fructose. I was a sugar junkie. I used to love to eat honey buns and drink Dr. Pepper, eat ice cream, sugary cereal, lots of ketchup, you name it, if it had sugar in it, I probably ate it. I used to drink a little coffee with my flavored creamer. I had to change my way of thinking so that I could change my eating. Instead of saying, “I can’t give up soda, or creamer, or fill in the blank,” I had to start telling myself “I can do this for my health. I’m worth it.” I prayed and asked God to give me the strength and courage to quit drinking Dr. Pepper and to quit eating so many sugary foods. God is so faithful. He has helped me. I’ve had to do my part by keeping things like ice cream out of my house. Every once in a while I’ve allowed myself to indulge, but more and more I’m realizing it’s just not worth it.
Recently our church had a potluck dinner. I was so proud of myself for passing up all the desserts until I saw a friend eating ice cream. Then someone said, “You have to try this gluten free dessert.” It went downhill from there. I ate ice cream and a small piece of this gluten free dessert (that was loaded with sugar) and by the time I got home my joints were swollen and I was in pain for a few days. This was another wake-up call as to how much sugar really does affect my body. The next day we went to a grocery store and they were grilling ribs smothered in barbecue sauce. I was so tempted to buy some, but when I thought about the pain the sugar would cause, I was able to say no.
I’m always trying to find recipes that I can cook that taste good and are good for me. A couple of months ago I was going to visit my daughter and her family in Colorado. She informed me that she had changed their way of eating based on the “Trim Healthy Mama” plan. To be honest, I was dreading eating this new “cardboard diet” that she was on. To my surprise, every meal she cooked I absolutely loved. I was there for nine days and boy did it start to make a difference in how I felt. After three or four days I began to sleep through the night. I hadn’t done that in years. I woke up with more energy than I had felt in a long time. I am not struggling as much with my memory now either. That is when I determined that I was going to jump on board and become a “Trim Healthy Mama.” My sweet husband bought me the cookbook Trim Healthy Mama by Pearl Barrett and Serene C. Allison.
With the Trim Healthy Mama plan I can enjoy delicious food and even some desserts. Instead of loading my body down with sugar, I use organic pure Stevia. I realize some people may think Stevia is not a good substitute, but from everything I’ve read, it’s actually fine to use. I’m referring to pure Stevia, not the cheap stuff that is full of fillers. Even with Stevia I feel it’s important to use it in moderation.
I’ve been cooking very tasty meals with the Trim Healthy Mama cookbook. My favorite so far is Chicken Jalepeno Popper Soup. I’ve been amazed at how I can cook healthy meals that taste great. My husband is enjoying the new way I cook and that speaks volumes. I am learning how to cook and bake yummy food that doesn’t cause me pain. That is a win for me.
I hope this blog will encourage those who struggle with sugar addiction. I understand your pain, literally. You can break free by God’s grace and by changing the way you think. Remember the little engine that said, “I think I can, I think I can…” By the way, I drink a cup of black coffee every morning now and I look forward to it. Start taking steps to break this addiction. Please don’t wait until you are sick or diagnosed with something that brings on a wake-up call. Do this for you because you deserve it!
My Breakfast Smoothie

This is an amazing, healthy breakfast smoothie packed with vitamins, protein, fiber, and Omega 3’s.
Breakfast Smoothie Recipe:
1 tbsp. of organic chia seed (soaked in 3 or 4 tbl. of water for about 5 minutes)
1 to 2 tbsp. of organic cold milled ground flax seed
3 Brazil nuts
1 tbsp. of coconut oil
3 fresh mint leaves (or fresh basil leaves)
1/4 of an avocado
A handful of kale or spinach leaves
1 small frozen banana or 1/2 of a large banana
13 frozen sweet dark cherries (no pits)
3/4 to 1 cup of Silk Almond Coconut Blend
Blend on high in your Vitamix or powerful blender of your choosing for about 30 to 45 seconds and serve. You can use a variety of frozen fruits for different tastes.
