Date Bar Recipe:
1 cup of medjool dates (depitted)
1 cup unsalted/unroasted cashews
2 tbsp. of virgin coconut oil
1 tsp. vanilla extract
1 tbsp. of cacao or unsweetened cocoa (this is optional if you want it to taste like a healthy snicker bar)
Dash of Kosher Salt
Soak the dates in hot water for 5 minutes. Cut up the dates and throw away the seeds. Blend all ingredients in your blender/food processor until it is a texture that can be molded but not too sticky. Spread on baking sheet lined with parchment paper. Lightly sprinkle with kosher salt. Place in the freezer for at least an hour. Take out and cut it up and store it in the freezer. Enjoy!
*If you don’t have a stronger blender, put your cashews in a food processor and chop them finely.

Thanks for the mention! I like putting other yummies on top as well. Chili makes it a little spicy. You can also cut these into shapes for a fun theme event.
